From fresh chèvre to parmigiano reggiano, age plays a huge role in the flavor and texture of cheese. We've teamed up with our friends at FireFly Farms (from Accident, MD) for a class that focuses on the effects of time on cheese. We'll taste multiple batches of the same recipe - from fresh, just cut curds to supremely gooey and ripe wheels - in the hopes of better understanding the lifecycle of some of our favorite cheeses. Oh yeah, add in the fact that we're going to pair those cheese with some wines that showcase a different side of some of your favorite styles/grapes and it should be an educational and supremely tasty night.
FireFly Farms makes artisanal, hand-made (mostly goat) cheese in Western Maryland. They work directly with farmers located to source all milk from within a 30 mile radius of their creamery. Using time-honored methods; their cheeses are scooped, turned, salted, washed, brushed, and wrapped by hand and are composed of 4 simple ingredients: milk, bacterial cultures, rennet, and salt.
Ticket price includes 7 cheeses and a flight of 4 wines. This is a 21+ event.
